Scotch Eggs

This weekend I was snowed in! When you find your self snowed in calories don't count, which is why I feasted on cupcakes, a Greek food, homemade chicken nuggets, and Scotch eggs.  In case you haven't been lucky enough to stumble upon Scotch eggs, this is your lucky day.

I got the recipe from Bon App├ętit's most recent issue.  As you can see above, a Scotch egg is a soft boiled egg that is wrapped in breakfast sausage, breaded, and fried.  How could anything wrapped in sausage and fried not be amazing. We followed the serving recommendation to eat them with mustard, but I would also like to try them with a bit of maple syrup.

Now that the snow has melted, I am back to my usual (slightly more balanced) eating habits.  Hopefully it snows again soon!

Disclaimer: No, these are not health food.  Yes, this is the kind of recipe that Paula Deen would probably make.  It is recommended that you only indulge in foods like this when you are snowed in and calories do not count.
