I got the recipe from Bon Appétit's most recent issue. As you can see above, a Scotch egg is a soft boiled egg that is wrapped in breakfast sausage, breaded, and fried. How could anything wrapped in sausage and fried not be amazing. We followed the serving recommendation to eat them with mustard, but I would also like to try them with a bit of maple syrup.
Now that the snow has melted, I am back to my usual (slightly more balanced) eating habits. Hopefully it snows again soon!
